Kasabero's attempt at the Winter Warmer recipe from Gordon Strong's Modern Homebrew Recipes, Stephanie's Fav is beautifully clear with a deep ruby color. The rich and malty flavor is offset with a subtle kick of alcohol at the end. A dangerously drinkable brew.
One of Kasabero's flagship brews, the latest batch of our Gloom Buster Honey Saison completed primary fermetation in a Seven Stills Whipnose whiskey barrel. Though it did not pick up much of the barrel character, this is a crisp, refreshing, and highly drinkable beverage.
An amped-up version of our Afternoon Shot O' Joe robust porter, Triple Shot spent several weeks on bourbon-soaked American oak cubes after primary fermentation and got a dose of Stumptown cold-brewed coffee spiked with Maker's Mark at bottling. Our first attempt at oak aging, TSJ picked up a significant amount of wood flavor, though not quite as much vanilla character as we had hoped. TSJ is now an annual, late-May brew. Our only regret with TSJ14 was the use of a defective batch of carbonation capsules. Never fear, though unpleasant to fish out of a glass, the capsule casings are perfectly safe.
Is it an Irish Red? Is it a Dry Stout? Is it a brown ale? You decide. The Not So Red was originally designed as a Smithwick's Clone, though a heavy-handed application of roasted barley resulted in a dry, roasty beer. Though not what we intended, it is quite drinkable even if it could benefit from a bit more maltiness to balance out the roast.
Frankie is Kasabero's version of an American-style Barleywine modeled after AleSmith's Old Numbskull. Clocking in at 12.5% ABV, the 2015 version of this beer got two doses of yeast to guarantee full attenuation. The beer was then aged in a barrel that originally housed Fluxuate Whiskey by Seven Stills of SF. The barrel imparted significant boozy character and a nice depth that was rounded out with another healthy dose of hops added after barrel aging. He's tasty now, but we look forward to trying him again in a few months.
When we conceived of Kal, we imagined a sticky sweet and sippable brew. A stark contrast to Strawberry Kal, Raisin Kal has a deeper character gained from aging his final two weeks on raisins instead of strawberries. Save for enjoyment on a cool winter night.
FYA is Kasabero's version of the White House Honey Ale recipe. Brewed with Macadamia Nut Blossom honey straight from Maui, this is a nice summer brew. We enjoy it paired with Indian food.
An Irish Red with a hint of spicy rye, this is our second batch of the brew that took second place in the specialty beer category in the Sacramento regional AHA competition. Though not as clear as batch one, Lil' Red batch two has a nice maltiness and we think it will continue to improve in the bottle.

Inspired by some of our favorite Lost Abbey brews, Kal was designed as the first resident of our 10-gallon Chocasmoke Whiskey barrel from Seven Stills of SF. We combined two five-gallon batches of an Avery The Reverend clone and allowed the flavors to meld for five weeks in the barrel. The resulting beer has a prominent whiskey flavor that balances nicely with the fruity esters and malt profile of the Belgian style.
After barrel aging our basic Kal, three gallons were extracted and aged on four pounds of frozen strawberries. Refreshing and very drinkable, you'd never know this was a 9% beer.
SHSMaSH is our Southern Hemisphere Single Malt Single Hop beer. This extra hoppy, extra pale ale uses only Patagonia Extra Pale Malt from Chile and Motueka hops from New Zealand. Fermented with Giga Yeast Vermont IPA yeast, this brew got four doses of hops, first wort, five minute, flame out, and dry hop. A crisp and flavorful beer.
